I’m not going to lie, the first day that I searched for a picture for this challenge I struggled. I thought, I don’t have any “cool” pictures! But, the neat thing is that this challenge has made me look at a lot of pictures, think about them and why I have them and how they have impacted me or helped form me into who I am. So, here is today’s!

You know those times in life where you are more grateful for people and things than normal? Yeah, I had one of those days a few days ago. Right before lunch T texted me and said “Well, hit a deer on the interstate. Probably totaled truck”. The end. No “I’m ok” or “headed to the hospital”…nothing! UGH! I called him immediately and after 2 rings it went to voicemail…super! I will admit that I started to panic then. Yes, he had the ability to text me, but what if he passed out, what if he couldn’t use his phone because he was in an ambulance. Remember, I’m a woman and my mind goes to the worst, first! I texted him then and said, “Are you OK? Call me please!!? Thankfully he almost immediately returned my text to let me know he was ok and he would call when he could (post paperwork, getting a different truck, etc). Thanks be to God T was fine. A small burn on his arm from the airbag deploying and little sore, but other than that just fine, so fine he went right back to work and was actually mad because it took up so much of his day when he had stuff to do! I would have been so shaken that I would have been home on the couch the rest of the day!
We are beef people. Yes, I said it. But, I’ll also add that this pork burger recipe are some of favorite!
Now, in my defense, I grew up around cattle and my dad has worked with cattle in some respect or another for most of my life! Chicken probably comes next in our arsenal of meat with Pork bringing up the rear. Now, that doesn’t mean we don’t like pork, it just typically isn’t at the top of our list.
That being said, we have go through our half beef faster now than normal! The boys are growing and eating more, so most ground beef recipes require 2 lbs! Because of this we have been forced to eat other meat and try new things to make things stretch until late summer/early fall when we get our next half. Enter pork! When friends of ours gifted us with some pork I decided to try a new recipe. I tried a similar recipe with ground beef quite a few years ago, but decided to give my ground pork a spin-off of that recipe.
