Since starting on the #21DayFix a little over 21 days ago (read my thoughts about it HERE), I’m making a valiant effort to refine the way I eat all together (not just when I’m on the “Fix”). One of the meals that is hardest for me to eat “whole” or “clean” is breakfast!  So, the other day when I found this baked oatmeal recipe by SkinnyTaste, I was ecstatic to give it a try and after consulting with Coach Shannon, I got confirmation that this was an acceptable food and I set off to bake it.  Despite being delightfully yummy and filling on a cold day, it got my wheels turning to other combinations that I could try! 21 Day Fix Approved Foods

I’m in the final week of my first 21 Day Fix and while I haven’t followed it to a T (due to family Christmas dinners), I’ve followed it exactly every other day of the week that those dinners don’t happen on and I’ve had fun “playing” with my food.  I found 3 21 Day Fix approved variations on foods that I thought were so great, I wanted to share them with you!  Even if you aren’t on the 21 Day Fix diet, these are great “whole foods” to feed your body and just plain delicious!!  Here are my 3 favorite current dishes!

There’s nothing better (at least in our house) that a bowl of chili with a slice of warm beer bread!  Thankfully, my friend MS gave me her super easy beer bread recipe that is incredibly delicious!

Let me tell you about my friend MS!  MS is one of my peeps at my “big girl job”.  MS is 86 years old, plays bridge on a weekly basis, volunteers with several different organizations, lives on her own, and is just an all-around pretty dang cool person!  How cool?  I asked her what her secret was to staying to young and spry!  She told me that you just have to keep going, “when you do nothing but sit in a chair is when you have to start looking in the newspaper to see what day it is and I don’t want to be that person!”  Right on MS, right on!!

Jerk Chicken and Vegetables

Do you ever stumble upon something that blows your mind? That recipe that is so good and so easy that you feel like it’s a trick? Like surely something this easy can taste this good?? Well, let me introduce you to Jerk Chicken and Vegetables.

I knew that I wanted to make up some “bowls” of food for lunches this week and I typically do chicken and vegetables of some sort. I picked up broccoli and cauliflower from my local Fareway, along with a boneless skinless chicken breast! I wasn’t sure what was going to end up being with all of this, but I as I wondered down the aisle of wpid-1447014788574.jpgcondiments, a bottle grabbed my attention, KC Masterpiece Caribbean Jerk 30-Minute Marinade.  Traditional I like jerk chicken, so I grabbed a bottle and headed home (with my  entire cart load of groceries…boys can really eat, remember?!)

Dried Beef Stuffed Chicken Breasts

Do you ever have one of those new recipes that’s easy and a huge hit in your house??  What a feeling, right?! You feel like you just conquered a demon.  Well, for me it came a week or so ago.  We got our half beef for the year back in August and then later picked up our dried beef!  T has been on a kick to use the dried beef in ways other than sandwiches (just bread, butter, and dried beef for me) or dried beef gravy (chipped beef gravy) over mashed potatoes.  I haven’t been quite so determined, but he has been so I decided to appease him.

I decided that I was going to use it to make some sort of stuffed chicken breast.  The dried beef has such a strong salty flavor that I was convinced it would liven up chicken.  However, now I had a second challenge.  T is not really a fan of boneless, skinless chicken breasts because he says they get too dry and don’t have any flavor.  (Me on the hand could eat them every meal.)  I also wanted to keep the recipe simple and easy to make because that’s how I roll in my busy life.  It’s got to be easy or it will only happen once!  Here’s what I came up with!

Easy Parmesean Tilapia

I love fish! I love fish if it’s grilled, baked, fried, in fish tacos, tuna fish sandwiches and I could go on and on about how much I love fish! We do not eat enough fish for my liking and that’s mainly because T is incredibly picky when it comes to fish!  Due to his pickiness I’ve baked and fried fish several different ways to no avail! 🙁  Up until now, he’s only liked my uncles fresh fried fish, but don’t worry, I knew I would prevail!  😉

The Recipe

I have been craving fish for so long that I decided I would tackle the fish beast one more time!  So last week, I thawed out my Tilapia filets and threw together a quick breading, fried those filets up and…SUCCESS!

The cooler temps of the fall typically signals all things pumpkin and apple! People visit apple orchards and pumpkin patches and come home with their pickings! These Apple Crunch Muffins are perfect for using some of those orchard apples!

I’ve been craving something created with apples, so I did just that! I took to my recipe box and combined some recipes as well as adding my own twists.

To say that we had our share of sweet corn this summer is an understatement. We’ve grilled quite a few ears, froze enough to get us through till next summer, and have some ears in the fridge still. Once you’ve eaten that much, you’re looking for something new.  I’ve roasted broccoli, cauliflower, and carrots (not for me though, I don’t do cooked carrots) and thought why couldn’t I roast corn?  And thus, Savory Skillet Corn was born.

Pumpkin Raisin Muffins

We’ve been through this before, I LOVE CARBS!! I especially love carbs for breakfast. It just is who I am and I’ve come to grips with it!  I crave breakfast foods like cereal, muffins, cinnamon rolls, etc.  I LOVE muffins!  Any kind of them, I love them!  What I don’t love?  The calorie intake, the sugar, the fat from oil & butter, etc.  Yeah, I  know…all the things that make them tasty!  I’ve been on the quest for a muffin that I can eat for breakfast, but not use up the majority of my calories in just 3 bites!

It is fall and the temps are getting cooler, which also means I’ve been craving my pumpkin chocolate chip bread!  So not healthy!!  So, the other night I decided that perhaps I could make a healthier version that wouldn’t be horrible and I succeeded.
