Growing up my mom made everything homemade and from scratch and Ground Beef  Stroganoff was one of those meals! I honestly can’t think of anything that we ate that came from a box or a jar (from a grocery store). In the many years that I was single I also started making things from scratch and putting my own spin on things.  Then, I met T and the boys.  What they were used to was frozen lasagna, Hamburger Helper, Ragu spaghetti sauce, and other types of foods similar to this and when you love someone you eat certain foods and you cook certain ways.

Digging through the freezer and cupboards trying to figure out what to make for supper can sometimes be a challenge.  Recently, as T and I were pondering this specific quandary, I came across Val of Corn, Beans, Pigs, & Kids recipe for Shepherd’s Pie.  We tried this a few months back and enjoyed it, but I also know T well enough to know that he likes something with a bit more substance to it (Val’s recipe is broth based).  I also know how much he loves pot pies, so I decided to combine both and come up with my own recipe.

Chicken Marinade & Roasted Sweet Corn

Some recipes come from nowhere and some recipes come from our heritage!  This chicken marinade recipe might not be my heritage, but it does come from my childhood!

My brother and I grew up in a home where food was important!  Not in a “eat your feelings” type of way, but in a “we show love by cooking” type of way!  Both of my grandmothers were amazing cooks!  My Grandma S was a phenomenal baker and our mother learned well!  She still is the best baker & cook I know!  I’m envious of her abilities some days!

Cooking is in my blood!

Both my brother and I grew up helping in the kitchen, learning the ways of cooking & baking.  Some of my best memories from growing up were in the kitchen with my mom!  One time my brother brought home a marinade recipe and it became quite popular in our house.  To this day, I honestly don’t have any idea where he got it, but when I found it in the back of my recipe box the other day, I knew I had to have it again!

Zesty Creamy Cucumbers

T has decided that cucumbers are one of his favorite things to grow in the garden now!  Last year I had 2 plants in our garden and it was the perfect amount!  This year, I think I have at least 6!  So, because of that I’ve been eating cucumbers for quite some time now!  I love having a garden with fresh produce for many reasons!  Of course nothing is better than garden fresh green beans, but we’ve frozen our own green beans for this coming winter as well.  I’ve shared a ton of green beans with friends & neighbors.  I’ve put chopped red onions in the freezer for the future and we use our potatoes as we need them!

Chicken Noodle Bowl

This past Saturday I had a night to myself! After a week of family vacation, R headed to his moms and I sent T & M to a race event that I really had no desire to attend for several reasons! One of them was that I needed time to myself!  When I get time to myself at home, I love to experiment with food that I know the guys wouldn’t eat!  I love to try new things, put part in the freezer and see what comes out!

Strawberry Stuffed French Toast with a Twist

I can eat breakfast for every meal and this Strawberry Stuffed French Toast is no different!  Its sweet, savory, and absolutely delicious!

The Recipe

A couple weeks ago on the weekend, I was hungry for something other than our regular weekend breakfast of pancakes. I had some fresh strawberries and I can’t resist a good stuffed french toast, but had one main problem: no cream cheese! Which, I honestly was okay with because I wasn’t interested in consuming all those calories of the creamy goodness, but…the thought of stuffed french toast made me incredibly hungry! So, as I stood at my fridge the wheels began to turn. I pulled out a few ingredients and here is what I ended up with.

French Onion Pork Burgers

We are beef people. Yes, I said it. But, I’ll also add that this pork burger recipe are some of favorite!

Now, in my defense, I grew up around cattle and my dad has worked with cattle in some respect or another for most of my life! Chicken probably comes next in our arsenal of meat with Pork bringing up the rear. Now, that doesn’t mean we don’t like pork, it just typically isn’t at the top of our list.

That being said, we have go through our half beef faster now than normal!  The boys are growing and eating more, so most ground beef recipes require 2 lbs! Because of this we have been forced to eat other meat and try new things to make things stretch until late summer/early fall when we get our next half.   Enter pork!  When friends of ours gifted us with some pork I decided to try a new recipe. I tried a similar recipe with ground beef quite a few years ago, but decided to give my ground pork a spin-off of that recipe.

Apple Cinnamon Stuffed French Toast

I love breakfast foods! I love experimenting with breakfast foods. I love french toast. I love stuffed french toast! I know, that’s a lot of love, right? This past weekend I was feeling adventurous and wanted to try something new. I also had 4oz of cream cheese that needed to be used beucase the other half had been used in Easy Beef Enchiladas earlier in the week!  In my typical fashion, I don’t plan ahead, so I have to make due with what I have in the house!  Saturday morning was no different!  I wanted to use up the cream cheese and I desperately wanted stuffed french toast, but had no real “fresh fruit” in the house as I hadn’t gone grocery shopping yet.  The only fruit I had in the house was apples, so the wheels started turning.

Easy Shredded Beef Enchiladas

Easy Shredded Beef Enchiladas

Did you know it’s Beef Month and so these Easy Shredded Beef Enchiladas fit perfectly!  We are lucky enough to be able to purchase our beef from friends, who are farmers! We purchase it a half at a time (which means we get a half of a cow processed at a local locker) and our favorite locker is Lewright Meats in Eagle Grove, IA!  This also means that we can have cuts of meats that we don’t eat as often as others!  Ground beef goes REALLY fast in our house, steaks are close behind.  Roasts…slowly bring up the tail end.

So, I’ve been hunting for recipes to use with roast beef.  Last month I introduced Shredded Beef Tostadas!  Well, I have good news and bad news The good is that  I thought they were fantastic and the shredded beef that I concocted was melt in your mouth good.  The bad news is that T thought the tostadas were too messy and hard to eat!  I thought to myself…how can I use this mexi-beef in another dish?  So, without further adieu…
