Chip Casserole, A Family Favorite

If you’ve followed along with my adventures of being a step-mom at all or follow me on social media, you probably know that one of M’s favorite foods (dishes) is my chip casserole. I’ve had many people tell me since I started blogging that I needed to share the recipe, but I just never have. Why? I’m not sure! It’s not a fancy recipe, not gourmet, full of preservative filled Velveeta, but such a good comfort food and since it’s a favorite in our house, I decided it was time!

The Recipe

Serves: 4-5
Ingredients
  • 16 ounces pasta
  • chopped or shredded chicken
  • 1 can cream of chicken soup
  • 10oz milk
  • 1/2lb Velveeta, diced
  • 1 teaspoon onion powder
  • salt
  • pepper
  • potato chips, crush
Instructions
  1. Cook the pasta to the al dente instructions.
  2. Mix the chopped Velveeta, cream of chicken soup, milk, onion powder, salt, pepper, and chicken together
  3. Combine soup mixture with cooked pasta.
  4. Place in a casserole dish
  5. Top with crushed potato chips
  6. Bake 20-30 minutes until bubbly.

It so super simple!  That’s it!  Nothing fancy, nothing gourmet, but a comfort food for me and obviously for M now!  This recipe originally started with my grandmother (I’m honestly not sure where she got it) using corned beef in a can and buttered bread crumbs for the topping.  It was a favorite of mine as a child and I made a few adjustments so the boys would eat it several years ago and it ended up being a favorite.  In fact, the other day M said, “We need to have something really good for supper like chip casserole!”  It made me realize that no matter how lack luster a recipe is, they have their favorites and it’s something only I make and that makes it extra special!

  1. You can’t beat a good comfort food dish! Klayton asked for macaroni and cheese last night for supper so we enjoyed our fair share of Velveeta too 😉 (BTW I make my mac and cheese half with Velveeta and half with shredded cheese.)

    As for favorite dishes probably Greek Steak and Spaghetti, Taco Skillet, Sicilian Pasta and Chicken Caesar Pasta.
