Growing up in my family, the other part of food was growing our own food!  We grow green beans, tomatoes, onions, cucumbers, etc!  While we don’t have room to grow a little bit of everything, my dad does and he loves to share, so sweet potatoes are easy to come by!

Sweet Potatoes

When I was in college I worked at a golf course one summer and they served the best baked sweet potatoes!  I’m not sure how they prepared them and I’ve never been able to recreate them.  They also served fresh whipped cinnamon butter with them and it was the perfect pair!  So, the other day I was trying to figure out how to create a delicious sweet potato that I could enjoy!  And that is how these cinnamon sweet potatoes with yogurt dipping sauce came to be!

Cooks Notes

  • *Since I’m typically the only ones that eat them, I prepare one sweet potato for a meal!  For one sweet potato, I use about 1-2 tablespoons of olive oil and 1 teaspoon of cinnamon.
  • The yogurt dipping sauce can be kept in the fridge for as long as the yogurt is good.  Mark the expiration date on your container with a dry erase marker!
  • If you don’t love cinnamon, then either omit the cinnamon on the potatoes or just reduce the amount.
  • I like to broil the potatoes for just a couple of minutes before pulling them out of the oven to crisp them up just a little bit!
  • I sliced my potato with a knife, but now that I’ll be making them more often, a frie maker like this one is on my Christmas list!

The sweetness of the sweet potato combined with the tartness of the yogurt dipping sauce is the perfect combo!  Avoid feeling bored and mundane with your eating healthy with these fries and dipping sauce.
