“Clean” Open-Faced Tuna Melt – A Healthy Alternative

I love tuna and could eat it on a very regular basis. Ok, I’ll be honest, I really do eat it pretty regularly and I’ve recently fell in love with the tuna packets that don’t require you to drain the tuna.  And while I know they are more expensive, my time and energy are clearly worth more than that to me! Plus, who can actually successfully drain a can of tuna without losing some down the drain?!

I’m in the middle of another 21 Day Fix round as well as participating in the Live Healthy Iowa 10-Week Wellness Challenge.  Basketball season (hello, concession stand food) as well as my own bad habits have made it more difficult this time around and it’s cold which means I want creamy, gooey, warm foods!  Why are comfort foods so unhealthy?!

Tuna Melts Gone Healthy

As I’ve worked harder and harder to “clean” up my diet, I’m always looking for ways to turn my favorite foods into a healthy version for me to enjoy!  Tuna fish sandwiches are one of my favorites…especially in the form of a tuna melt! Some people will argue that mayonnaise is considered “clean” and an acceptable form of a healthy fat, but I don’t!

So, what does a girl do when she just wants an ooey, gooey, tuna melt?!  She finds a way to make it happen!  Now, this isn’t easy as I don’t like avocado (as so many recipes use) and I’ve never been a mustard fan, so where does that leave me? Well, apparently it leaves me right here….using mustard!

“Clean” Open-Faced Tuna Melt

Ingredients
  • 1, 2.5oz packet of white tuna in water
  • 1 T of each chopped carrot, broccoli, & celery
  • 2 T dijon mustard
  • 2 T shredded mozzarella cheese
  • Pepper
Instructions
  1. Combine the first 6 ingredients thoroughly and season to taste with pepper! Heat through and spread on your choice of grains!

This recipe is super easy and super healthy, but it also helps feed those cravings for creamy, un-healthy, yummy foods!  Feel free to spread this melt on your grain of choice!  I’ve done it as an open-faced sandwich on a piece of whole grain bread and also on two rice cakes as pictured!  Whatever way you choose to eat it, enjoy!
