Chicken Marinade & Roasted Sweet Corn

Some recipes come from nowhere and some recipes come from our heritage!  This chicken marinade recipe might not be my heritage, but it does come from my childhood!

My brother and I grew up in a home where food was important!  Not in a “eat your feelings” type of way, but in a “we show love by cooking” type of way!  Both of my grandmothers were amazing cooks!  My Grandma S was a phenomenal baker and our mother learned well!  She still is the best baker & cook I know!  I’m envious of her abilities some days!

Cooking is in my blood!

Both my brother and I grew up helping in the kitchen, learning the ways of cooking & baking.  Some of my best memories from growing up were in the kitchen with my mom!  One time my brother brought home a marinade recipe and it became quite popular in our house.  To this day, I honestly don’t have any idea where he got it, but when I found it in the back of my recipe box the other day, I knew I had to have it again!

Easy Chicken Marinade

Ingredients

  • 1/2 cup soy sauce
  • 2 T sugar
  • 1/2 t garlic powder
  • 2 T vinegar
  • 1 T dried minced onion
  • chicken breasts

Instructions

  • Mix the first 5 ingredients together and pour over meat.
  • Marinade at least 2 hours
  • Grill until thoroughly cooked.

Cooks Notes

  • I will admit that the soy sauce is very strong in this, which I don’t mind, but you can reduce the amount of soy sauce and add some Worcestershire sauce if you prefer! 
  • Because the flavors are very strong in this marinade, it doesn’t need to marinade much more than 2-4 hours!  I mixed the marinade up and poured it into a Ziploc bag with 2 frozen chicken breasts and let them spend the afternoon getting happy and thawing at the same time!  T then grilled them to perfection and they were juicy and delicious!
  • You can use this same marinade with pork chops!

Garlic Roasted Sweet Corn

I paired it with Garlic Roasted Sweet Corn that I’ve mastered this summer and can’t seem to get enough of!  Roasting the sweet corn has made the cooking process much easier as well.  Husk and clean 2 ears of sweet corn.  On a large sheet of foil place about 1/2-1 tablespoon of butter (yes, real butter) then place your 2 ears of corn on top of that.  Sprinkle the corn with minced onions, garlic powder, and pepper!  Then, place another 1/2 – 1 tablespoon of butter on top and fold the foil up!  Cook on a grill for 10-15 minutes or until corn is tender!  Salt after removing from foil!  YUM!

This is a great summer easy meal and I plan on having it again soon!  Give it a try and let me know what you think!

  1. I missed my Iowa corn binge this summer but I am loving seeing all the great ideas for how to cook it that are showing up on blogs. The marinade recipe sounds like a definite must try so am filing it away for post move!
