One-Pan Italian Skillet & Life Moving Too Fast

I’m excited to introduce you to my One-Pan Italian Skillet, but we’ll get to that in a minute…

It’s May?!  How the heck did that happen?  Could someone please find April and send it back to me??  Good gravy that month went fast and I know it’s because I spent 75% of it at track meets, which is fantastic because I love trackwatching anything the boys are involved with, but dang it was busy and I feel like this site suffered because of it.  The reality is that it probably did suffer…lack of new posts, etc. but the other reality is that is where my life is right now and I knew something had to give and I also knew that you would all understand and appreciate the fact that I was focused on my guys!  So, thank you for your graciousness and patience…it is much appreciated!

Due to our crazy schedules there were very few nights that I was actually able to make a supper that wasn’t picked up from fast-food, cooked in a crockpot or reheated leftovers, but when I did…I succeeded in a big way.

I grew up eating ring bologna and fried potatoes.  I still find it delicious although a little hard on the arteries.  That being said, we received some new ring bologna’s with our 1/4 beef this spring and were looking for for a new way to fix it!  So, one day several weeks ago I decided to throw together something and see what happened!

One-Pan Italian Skillet

An easy, light pasta dish made quick and in one pan!
Ingredients
  • 1 ring bolgona, sliced
  • 1/3 onion, chopped
  • 2 cans Italian diced tomatoes
  • 1 cup beef broth
  • 16 ounces dry pasta
  • 1 1/2 teaspoon Italian seasoning
  • 1 teaspoon garlic powder
  • 1/4 teaspoon red pepper
  • salt & pepper
  • shredded mozzarella cheese
Instructions
  1. Slice the ring bologna into bite size pieces.
  2. Chopped the onion into small pieces.
  3. Heat a large skillet over medium heat and place the ring bologna & onion in it, cooking until warm. Once warm, pour in the tomatoes and beef broth.
  4. Add the seasonings and pasta and cook until pasta is tender!
  5. Serve with shredded mozzarella on top.

This recipe is easy to throw together and hearty without being filled with cream soups!  The italian flavors is a fresh twist on ring bologna.  I served it with some romaine tossed lightly in a light Italian dressing and it paired well!

I hope you enjoy it and find some time to stop, enjoy the world around you and relax.  I’m going to purposely schedule some into my life!  I’ve discovered that I have to do that in order to get it.  I guess that’s all part of Learning As I Go.

  1. Love one pan meals! We just had kielbasa this week and it’s good in just about anything. Looks delicious.
