Oven Packet Asparagus & Life Right Now

I love asparagus and pretty much anyway you cook it, I’ll eat (except pickled).  It’s one of my favorite vegetables.  Traditionally, I eat it sauteed or steamed, but the other day I was feeling adventurous and whipped up this Oven Packet Asparagus!  It’s tasty, easy,  requires little attention, and is healthy!  What makes for a better recipe?!

Life Right Now

Remember those posts where I said we were on “vacation”…meaning there was no sports season going on?  Well, that is no more!  We’re officially into the swing of track season!  Both R & M are participating this year!  It adds more track meets (19 in about 6 weeks to be exact), but I’m so excited about it!  Track is definitely R’s sport.  It’s what he excels at and I would bet to say it’s the one he enjoys the most!  This is M’s first year participating and I can’t wait to see how he does, which events he enjoys, and where this takes him!

Adding into the craziness of working full-time and a whole lot of track meets, this is T’s busy season, which means he’s working a lot more than normal and I’m picking up the slack!  (Check out more HERE!)  While it can be stressful (or is really stressful at times) and we don’t see a lot of each other, it’s a season and it too will pass!

So, moving on to my Oven Packet Asparagus.  I’ll admit, it’s nothing fancy, nothing fussy, just a dang good feature of some fresh asparagus and I also love how easy it is!  While I love sauteed asparagus, it requires a lot of attention!  This, however, does not!  It can be easily thrown together and thrown in the oven and left while the rest of supper is cooking!

Ingredients
  • 2 cups diced asparagus
  • 2 T extra virgin olive oil
  • 1/4 teaspoon dried basil
  • 1/4 teaspoon dried thyme
  • 1/4 teaspoon garlic powder
  • salt
  • pepper
  • Parmesan Cheese
Instructions
  1. Dice the asparagus into bite size pieces.
  2. Combine the olive oil and seasonings in a small bowl.
  3. Toss asparagus with olive oil & seasonings.
  4. Create a packet out of tin foil and place asparagus in the foil.
  5. Bake asparagus in foil packet in oven at 400 degrees for 20 minutes.
  6. Remove asparagus packet from oven and open the top.
  7. Sprinkle parmesan cheese on top of asparagus and return it to oven for 3-4 minutes.

While I was tempted to use Italian seasoning because it’s super easy (already mixed up) and yummy, I resisted!  Snagging the basil and thyme turned out to be a better combo than I thought and of course, everything is better with garlic!  The amount of salt, pepper, and parmesan cheese is completely up to you!  I love parmesan cheese, so I tend to go a bit heavier than most people might!  The full flavor and fresh asparagus makes this a fantastic side dish with any grilled meat this spring!
