I grew up eating minute steak, fried in a flour coating on the stove top. T did not and he does not love it, so I’m always trying new recipes to find something he likes. We always have several packages each year when we have a cow butchered, so I need to find ways to get rid of it!  For those of you who don’t have a lot of excess beef sitting around, minute steak is a very affordable way to get some iron into your diet!  However, if not cooked properly, minute steak can be incredibly tough!

Chicken & Asparagus Skillet – 21 Day Fix Approved

Time for a new recipe from me! WOOHOO! This Chicken & Asparagus Skillet is the perfect dish for eating straight from the pan or reheating for lunch! Packed full of protein and veggies with a little carb on the side for fun!

Prior to the Christmas season, I embarked on another round of the 21 Day Fix.  The more times that I follow through with the 21 days, the more adventurous and creative I get with my cooking.  While I tend to combine chicken and broccoli, I LOVE asparagus just as much, so I decided to come up with a new dish for my lunches!  When I think about cooking something, I often think about the re-heatability of a dish so I can use it for my lunches at work!

Executing My Vision

In my mind I worked through how I wanted this dish to come together and my favorite way to eat asparagus is sauteed, so I knew I wanted to incorporate that.  I also knew that it would deepen the flavor of the dish a great deal, instead of just steaming it.  To me, there are very few things as beautiful as sauteed asparagus!

I’m in my final week of this round of the 21 Day Fix and I’m feeling better about it than ever before!  I’ve done a much better job at meal prepping and not buckling to everything around me.  Now, I’ll be honest and say that this doesn’t mean that I haven’t buckled at all, but it’s been within reason.  This Broccoli Lemon Chicken has helped me stay on track!

The 21 Day Fix is going well this time around! I’ve had plenty of challenges to stop me from succeeding too!  Do you know how hard it is to find a “clean” meal at a basketball concession stand?!  I’m proud to say that I’ve only eaten one walking taco.  Other times I held out until it was over and we hit the drive through at a fast food joint where I picked the grilled chicken sandwich and only ate half the bun.  I also selected apple slices instead of fries!  It was brutal, but I did it!  I also had a citizen bring me a plate of cookies at my full-time job!  There were 8 on the plate and I only ate 2!  Meal prepping has been a lot my success to this round and I’m loving how I feel inside and out!

A Classic, Easy,& Simple Banana Bread or Muffins

It’s fall and that means I start baking again!  First on my list of things to bake is always this easy banana bread!  My boys LOVE banana bread and they can easily clear a loaf in less than 12 hours!  But since they are 12 and 16, that’s not an uncommon event!  

November is right around the corner and that means we’re officially done with football and cross country seasons!  This means that we’re currently in “vacation” mode, which means no games.  From the last football game to the first basketball game, 38 days!  That’s it, but I’m enjoying the down time with my three guys this fall!

Bread pudding has always been one of my very favorite desserts! If it’s on a menu, I’m trying it! One of my most favorite things about living in rural Iowa is that when you help someone they are bound to repay you in food!  It’s our “thing”!  It’s the same if someone dies, has a baby, gets seriously ill, etc…we bring food!

Black Raspberries

So, after helping a friend of mine and T’s the other day, he showed up with food: three bags of frozen (farm-fresh) black raspberries!  YUMMO!!  These raspberries got my mind turning wondering what wonderful thing I could make with them.  My friend Sara at Travel With Sara has recently spent time taking the Bread Pudding Challenge along the shores of the Alabama Beaches and my love for this sweet dessert. Now, the rest is history and I bring you: Raspberry Cream Cheese Bread Pudding!

Honey Glazed Coconut Almonds

Eating healthy and having an extreme sweet tooth is a challenge!  I can easily fall prey to revel bars, chocolate chip cookies, and ice cream.  Eating healthy is especially important right now as I’m participating in the Live Healthy Iowa 10-Week Challenge with a team of other Iowa Bloggers (check out more here)!

The Recipe

Thankfully, I’ve found a few healthy items that can fulfill that sweet-tooth as well like my honey apple fries!  Not long ago, I was able to satisfy that sweet tooth with these Honey Glazed Coconut Almonds!  They are just enough sweet without being too sweet and made with all “whole” ingredients!

Zesty Creamy Cucumbers

T has decided that cucumbers are one of his favorite things to grow in the garden now!  Last year I had 2 plants in our garden and it was the perfect amount!  This year, I think I have at least 6!  So, because of that I’ve been eating cucumbers for quite some time now!  I love having a garden with fresh produce for many reasons!  Of course nothing is better than garden fresh green beans, but we’ve frozen our own green beans for this coming winter as well.  I’ve shared a ton of green beans with friends & neighbors.  I’ve put chopped red onions in the freezer for the future and we use our potatoes as we need them!

Beer, pork…hello? How can that not equal good? The other morning I set out with a package of frozen boneless pork rib eyes and knew that I didn’t want to do our normal grilling (grill with Cavender’s seasoning) and wondered what I could come up with fast (I needed to leave for work in a matter of 5 minutes).  These Beer Soaked Pork Chops seemed to come together on their own!  I looked in my fridge and cupboards and decided what the heck, let’s give this a try!

Beer Soaked Pork Chops

A delicious and easy marinade for a pork chop!
Course: Main Course

Ingredients

  • 2 Boneless Pork Chops
  • 8 oz lime flavored beer
  • garlic powder
  • onion powder
  • salt
  • pepper

Instructions

  • Pour the beer into a shallow dish and season with garlic and onion powder, salt, & pepper. Place pork chops in the mixture and allow to marinate for at least 5 hours.
  • Grill to an internal temperature of 165 degrees.
  • Let rest for 5 minutes before serving

Meal Planning – Smothered Ribeye Steak

Last weekend I was feeling adventurous. I wanted to try my hand at a few things and test some things out. I had thawed out some ribeye steaks and bought baby red potatoes at the store because those are a favorite of T’s. My goal was to recreate a summer-time meal of steak and roasted potatoes. I looked through my recipe box and decided to combine a couple different things to come up with a marinade of sorts for the steak.  Here is what I came up with!

The way our life works, sometimes I have the time to play with recipes, create recipes, cook, and baked.  Sometimes, I’m merely surviving.  Thankfully, there are always times here and there between our busy schedules that allow me to let this part of my creative brain run wild!

#TastyTuesday – Meal Planning, Part #1

This past couple of weeks has been a rough one for T & I. Not for us as a couple in marriage, but for eating! Between many activities and events for the boys as well as our own meetings and indecisions, we’ve not been successful planning meals and executing them. I’m embarrassed to admit that our meals have ranged from Subway to Hamburger Helper to steak & potatoes. We’ve been bad about getting meat out of the freezer ahead of time and planning our meal! So, I was dedicated to making a change this weekend.
