Breakfast Strata – An Overnight Recipe

I love breakfast casseroles and could eat them on a regular basis!  This Breakfast Strata is one of the simplest and most delicious!

Eating Breakfast

One of mine & T’s favorite things to do is going out for breakfast on the weekends. We much rather prefer omelets, fried eggs, & breakfast potatoes when someone else cooks them. Somehow everything tastes better when it’s “out”. But, that being said, I’m always on the quest for a breakfast meal that satisfies us at home because, let’s be real, when you’re raising too always hungry, growing boys…eating out every weekend is not very economically feasible.

This weekend, I took to my recipe box on the hunt for such a recipe.  I also had some ham that needed to be used up.  I ran across this recipe and I’m not quite sure why it was in my recipe box because I don’t know where it came from or that I’ve even ever eaten this recipe, so we decided to give it a whirl!  We were pleasantly suprised and will definitely make it again, so I’m sharing it with you today!  I hope you enjoy it too!

Baker’s Note: We decided a few things while enjoying this Strata.

  • We are going to use bacon crumbles and ham next time (sausage would be good for those who enjoy sausage, but I don’t).
  • T has also requested that I add some onions and maybe peppers.  (I don’t like peppers, so I will probably be making the next batch into two small batches, one for each of us).
  • Enjoy!
