Hearty Veggie Egg Bake

You know how you feel when you find that one special item that makes your heart soar and give you such a “high”? Well, that’s how I feel about my Power Chef from Tupperware and to be honest, also how I feel about this veggie egg bake I’ve been obsessing over for the last couple weeks that I just had to share it with you!

As someone who gets up early in the morning to work out, I need a hearty breakfast filled with protein and substance!  I recently found these Cheesy Cauliflower Muffins and tried them and loved them so much that I decided to riff the recipe and come up with my own…backing off the cheese and amping up the veggies to make it even more healthy!

A hearty egg bake chocked full of good for you vegetables
Ingredients
  • 2 cups cauliflower, chopped finely
  • 2 cups vegetables, chopped finely
  • 6 eggs
  • 1 1/2 cups milk
  • 1 cup shredded cheddar cheese
  • 1/4 cup diced turkey bacon
  • 1t. garlic powder
  • salt and pepper
Instructions
  1. Begin by chopping your cauliflower and other vegetables.
  2. Whisk together eggs & milk.
  3. Stir in cheese, turkey bacon, and garlic powder
  4. Season with salt & pepper
  5. Grease a 9×13 pan and pour egg and veggie mix in.
  6. Bake for 40-45 minutes at 350.
Serving size: 1/6 pan Calories: 192 Fat: 12 Carbohydrates: 6 Sugar: 3 Sodium: 277 Protein: 13

I began my finely chopping my cauliflower in my Tupperware Power Chef chopper!  If you don’t have one of these…you need one!  I’ve decided that I love mine so much that I might just start sleeping with it!  It’s so easy and versatile!  And no, I didn’t get paid to say that, I really mean it!! Into a bowl went the cauliflower.  Then, in my chopper, I threw in some broccoli, carrots, and onion and chopped that up.  It came out perfectly at 2 cups.  Into a bowl went all that.

Then, I switched out the attachments and set the blade aside and used the paddle whisk to whip the eggs and milk together and then stirred in the garlic powder, turkey bacon crumbles, and cheddar cheese and then seasoned with salt and pepper.  Add this to your veggies and milk well.  Bake and remove to cool or serve hot if you want to eat it right away!

I will now cut this into six pieces and place in my Tupperware containers for a quick reheat at work for breakfast this week!  So good and so healthy for you!  And of course, you could omit the bacon and cheese if you want, but let’s all be real…everything is better with a little bacon and cheese! 😉  Enjoy!!

  1. Ooh – been looking for a new egg bake recipe. I don’t see the pin button though – how do I add it to my pinterest board?!?!?!?

  2. Oh never mind. I’m so used to be lazy about it and hitting the pin button I’ve forgotten the original way of doing it – just using the website. Duh. That’s like the second time in a week I’ve panicked over a missing Pinterest share button. But really, on recipes, it’s handy.
